This pan always cooks evenly, and I only use non-stick cooking spray on it if I'm concerned about something specific like cheese or caramel sticking. I use pizza cutters on my old graniteware pan all the time, and it hasn't hurt the finish at all. The pan goes through the dishwasher well with nothing left stuck on it and no rusting. Graniteware has been around for ages, and there's a good reason. It may be an oldie, but it is definitely a goodie! Get one. No, get at least two. It makes the best pizza, whether you make your own dough or use a Boboli. The crust is always crispy. I use a little olive oil on it and drizzle a light layer of cornmeal over it for extra crunch...but it's not necessary. Nothing ever sticks and it washes up beautifully.After last night's Friday-night pizza, I realized it will make a perfect wedding gift paired with a couple granite ware cookie sheets. I just love this pan and will also order another, since I usually need to make two and end up with one soggy pizza (on the pizza stone) and one awesome pizza. Why didn't I think of this earlier? I have been looking for non-toxic bakeware because it turns out that I am allergic to fluoride, and nonstick cookware coating contains very high amounts of fluoride (amongst other highly toxic chemicals). This pan produces a very crispy crust on my homemade whole wheat pizza dough and also my homemade cornmeal pizza dough. I have also used it to bake the kids chicken nuggets, fish sticks, and chocolate chip cookies on, and they slide around because there is absolutely no sticking going on. I was very happy with how the bottom of the chocolate chip cookies turned out. They were evenly browned and crisp, while the tops were soft and chewy, just the way we like them. Very very very happy with these pans. I understand the comments about the glue from the label, it's like they went crazy with it, but it only took me a couple of seconds to scrape it off, and it's not that big of a deal.
